Every year, billions of tons of agricultural waste are generated globally, contributing to environmental degradation and climate change. In the United States alone, over 130 billion pounds of food are wasted annually, representing a significant loss of resources and exacerbating greenhouse gas emissions.

Recent developments in food upcycling technology have opened the doors to innovation never seen before in the food industry. This opportunity to create high quality products from otherwise wasted food could not only close the gap on a circular economy, but put an end to food insecurity.

But closing this gap requires the collaboration of all of us involved in the food system.  Together, we can work to capture wasted food and create new food products to improve the economic food system in Minnesota and reduce food insecurity.
